All of our kitchen knife blades are made of steel. They are typically either stainless steel or non-stainless steel, or a combination of the two. Non-stainless steel is often referred to as carbon steel or high-carbon steel, however many types of Japanese stainless steel has a high carbon content. Non-stainless steel blades are usually harder and more brittle, offering longer edge retention.
